Myrtis Fig Cake – Gateau de Figue

Moist and full of fig flavor, this cake is similar in texture to a rich gingerbread and is one of my favorite ways to use figs.

Ingredients

  • 1 pint chopped or smashed fig preserves (with syrup)
  • 1 tsp baking powder
  • 2 egg
  • 1 tsp vanilla
  • 1 stick butter
  • 1 cup and 3 tablespoons flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 cup buttermilk

Directions

Step 1

In a medium bowl, combine all dry ingredients together - baking powder, flour, salt, soda, nutmeg and cinnamon.

Step 2

In a large bowl, mix together buttermilk, figs, melted butter and egg. Add the dry ingredients gradually to the wet ingredients and mix thoroughly.

Step 3

Pour into a well-greased floured 9x13 pan, bake at 375 degrees for 30 to 40 minutes or until an inserted toothpick comes out clean.
