Smothered Cabbage

This recipe is fantastic. For a few months, I had it almost nightly. I’d throw the smothered cabbage on top of white rice. MmmM!

Ingredients

  • 1 tbsp oil
  • 1 tbsp. sugar
  • 1 head cabbage, chopped
  • 1/2 lb pork meat, back bone does well or smoked sausage
  • Salt and pepper to taste

Directions

Step 1

In a heavy skillet, heat oil.

Step 2

Add sugar and dissolve letting the sugar brown some. Do not burn.

Step 3

Add chopped cabbage, meat, salt and pepper.

Step 4

Lower heat, cover and simmer until meat is done, stirring occasionally.

This dish can be served as a side or a main course with hot rice. Smoked sausage is a good substitute for the pork.
