Vanilla Wafers Coconut Cake

A nice twist to an angel food type cake – an old-school type of cake,

Ingredients

  • 2 sticks butter or margarine (8 tbsp)
  • 2 cups sugar
  • 6 eggs
  • 12 oz package vanilla wafers
  • 1/2 cups milk or carnation evaporated milk
  • 1 package 7oz angel coconut
  • 1 cup chopped pecans

Directions

Step 1

Cream two sticks of butter or margarine with 2 cups of sugar

Step 2

Add six eggs, one at a time and mix well.

Step 3

Pulverize a 12 ounce package Vanilla Wafers until the consistency of flour and add to the mixture.

Step 4

Mix in 1/2 cup sweet milk.

Step 5

Add the coconut and the chopped pecans.

Step 6

Pour into a buttered angel food tube pan - Bake 350 degrees 45 minute. Enjoy~
