A very easy and different twist – spinach, cottage cheese- onions- cheese- to the classic old cornbread – Gimme Some of dat Cornbread! One of our readers suggested this: added 1/2 cup cracklin crumbs to add a lil “more” Cajun taste!!
Preheat oven to 400. Drain spinach well, pressing between layers of paper towels. Place in mixing bowl, add cornbread mix and remaining ingredients and mix well. Pour into lightly greased 8 inch square pan. Bake for 30 minutes.
