Delicious, easy to prepare and “gud”. This recipe is an adaptation from Fast and Fresh made with three Cajun favorites – Shrimp – String Beans – Tomatoes..Oh wait there is a fourth favorite – Pasta. We love linguine for this recipe
Ingredients
- 1 pound cleaned shrimp
- 1/2 pound fresh or frozen string beans tips removed
- 3 tablespoon olive oil
- 3 medium fresh tomatoes cut in wedges
- 1 teaspoon lemon rind
- 2 tablespoon lemon juice
- 1 tablespoon capers drained
- 4 cups cooked pasta
- 1 tsp garlic granules/powder optional
- 1 teaspoon Cajun blend seasoning
Directions
Step 1
Rinse shrimp and pat dry with paper towel and set aside. Prepare your favorite pasta.
Step 2
After tipping the string beans, add the beans and one tablespoon olive oil in a skillet and cook on medium heat for five minutes.
Step 3
Add the shrimp and cook for an additional three minutes.
Step 4
Add the tomatoes and cook for another minute.
Step 5
Add the garlic powder and seasonings.
Step 6
For the sauce, whisk together the remaining two tablespoon of oil, lemon rind, lemon juice and the capers. Pour over shrimp mixture
Step 7
Serve over pasta.
