Shrimp Casserole

Ingredients

  • 2 sticks butter or margarine
  • 1 medium onion
  • 1 small red bell pepper, chopped
  • 1 small green bell pepper, chopped
  • 1 pound peeled shrimp
  • 1 can cream of mushroom or cream of shrimp
  • 1 can cream of cheddar cheese soup
  • 1 small can cream corn
  • 1 can whole kernel corn drained
  • 3 cups cooked rice

Directions

Step 1

Sauté the onion and peppers in butter until tender. Add the shrimp, the creamed soups and corn and cook until the cheese is melted. Add the three cups of cooked rice and season to taste with pepper. Place in a casserole dish and bake for 30 minutes at 350 degrees.
