Sautéed Chicken Livers

Ingredients

  • 1 lb chicken livers, halved
  • 3 tbsp flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup margarine
  • 1/2 tsp Worcestershire sauce
  • 1 onion, chopped fine
  • 1 celery stalk, chopped fine
  • 1 clove garlic, chopped fine
  • 2 jalapenos, sliced thin (optional)
  • 3/4 cup beef broth

Directions

Step 1

Coat livers in mixture of flour, salt and pepper. Set aside.

Step 2

Melt margarine in skillet and sauté the onion, celery, garlic and jalapenos (optional); cook until tender.

Step 3

Adding livers to the skillet, brown well on both sides over medium heat.

Step 4

Add the beef broth and Worcestershire. Cover and simmer for 3 minutes or until livers are slightly pink inside when cut.

Particularly good served over mashed potatoes.
