This dish is similar to dirty rice (rice dressing) and is a favorite of our family every holiday.
Brown sausage in a large pot; add vegetables and sauté until tender. Add soups and water; mix well. Stir in 1 cup uncooked rice or 3 cups cooked. Transfer to a large casserole size pan. Cover with foil and cook in 350 degree oven for 1 hour, stirring occasionally. Remove foil for the last 10 minutes to brown the top.
