The red cherries and coconut colors are reminiscent of Old Saint Nick’s beard and suit. I baked these cookies for my children and now for the grandkids.
Ingredients
- 1 cup butter
- 1 cup sugar
- 2 tbsp milk
- 1 tsp vanilla or rum extract
- 2 1/2 cups flour
- 3/4 cup maraschino cherries, finely chopped
- 1/2 cup finely chopped pecans
- 3/4 cup flaked coconut
Directions
Step 1
In a large mixing bowl, cream together the butter and sugar. Blend in the milk and vanilla. Stir in flour, cherries and the pecans.
Step 2
Mold into two rolls, 2 inches by 8 inches long. Roll in the coconut. Wrap in wax paper and chill overnight.
Step 3
Prior to baking, slice 1/4 inch thick and place on ungreased cookie sheet.
Step 4
Bake at 375 degrees for 12 minutes or till the edges are golden. Store in an airtight container.
