Riz Au Breme (Rice with Eggplant)

Ingredients

  • 3 large eggplants, peeled and cut in medium pieces
  • 1 chopped onion
  • 2 tbsp oil
  • Salt and pepper to taste
  • 3 cups cooked rice

Directions

Step 1

Boil eggplant in water. Cook until tender and drain.

Step 2

Sauté onion in oil until tender, then add eggplant and seasonings. Continue to cook until moisture has evaporated.

Step 3

Add rice and cook about 12 minutes longer. Serve and enjoy!
