A Super Shortcut recipe for a Great Cajun Classic!! When the author shared this recipe with her MeMaw, she commented that she was not fond of it. Her words: “I don’t care much for quick or short cut recipes”, or as the author likes to call them “lazy recipes”. Once MeMaw sampled the dish, she was hooked! A delicious timesaver meal when both parents work, using canned red beans, smoked sausage, and cream of mushroom soup. Red Beans and Sausage still appears on most menus and in many homes every Monday.

Ingredients

  • 1 large can blue runner cream style original red beans
  • 1 - 16oz can red beans
  • 1 can cream of mushroom soup
  • 1 small bag 10oz seasoning blend or 1 cup chopped onions
  • 1 lb smoked sausage sliced
  • 1 can Rotel Brand Tomatoes - optional

Step-by-Step Instructions

  1. Sauté sausage and onions blend mixture (or chopped onions if using fresh) for 5-7 minutes until sausage is browned and onions are tender.
  2. Add remaining ingredients and enough water to make a stew consistency. Salt and pepper to taste.
  3. Cook on low 15-20 minutes, stirring frequently. Add water to desired consistency.
  4. Don’t forget the rice and a side of cabbage slaw. Enjoy~
