An easy and irresistible dessert. These are served cold (great for a summer day) and can be prepared in advance.
Drain the cherries and mash them in a medium glass bowl. Mix in the pecans, raisins, cherries and condensed milk.
Mash the graham crackers to fine crumbs and divide in half; add half of the graham crackers to the bowl, and put the other half in a flat-bottomed dish.
Make a tube roll from the fruit/nut mixture and roll it in the graham crackers so it's coated.
Freeze the roll in wax or parchment paper. When you're ready to serve, slice the way you would a tube of cookie dough.
