In a medium pot, melt the fat. When heated add the onion and shallot and saute just until the onion turns clear; do not brown.
Add the milk and heat the mixture until almost boiling.
Add the oyster, liquid, parsley and onion tops and cook until the oysters curl. Add salt to taste and a pinch of cayenne.
Serve immediately.
