This is a great appetizer served on Ritz crackers or in serve as a main course in a pre-baked pie shell. I always make a double batch as it seems to disappear FAST!
In microwave, saute onions and butter in a 2 quart casserole on High 3 minutes.
Add flour, cream and wine, salt, pepper, Tabasco, and garlic. Cook on High in microwave for 1 1/2 - 2 minutes.
Stir cheese into hot mixture until melted. Add crawfish. Cover with wax paper and cook on high 6 - 10 minutes, stirring every 3 minutes, until crawfish are done.
If making the pie, bake a pie shell and add the filling. Serve with a fresh salad.
