Wikipedia….Kumquat culinary uses include candying and kumquat preserves, marmalade, and jelly. Kumquats can also be sliced and added to salads. In recent years kumquats have gained popularity as a garnish for cocktail beverages, including the martini as a replacement for the more familiar olive. A kumquat liqueur mixes the fruit with vodka or other clear spirit. Cheers!!

Ingredients

  • 2/3 cup milk
  • 2 beaten eggs
  • 2 tablespoon oil
  • 2 cups all purpose flour
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup pureed kumquats seeded
  • 3/4 cup chopped nuts
  • 3/4 cup granulated sugar
  • Frosting
  • 1/2 cup powdered sugar
  • 1 teaspoon melted butter
  • 1/2 teaspoon almond or vanilla extract
  • Milk to desired consistency

Directions

Step 1

In a iing bowl combine milk eggs and oil.

Step 2

In another bowl mix the dry ingredients.

Step 3

Add the liquid mixture and stir until moistened.

Step 4

Fold in the kumquats and the nuts.

Step 5

Bake in a greased 8" x 4" x 2" loaf pan in 350 degree oven for 50 to 60 minutes until a toothpick comes out clean.

Step 6

Cool and remove from pan. Cake is so good no frosting needed.

Step 7

Frosting - Combine the flavoring and sugar; add the melted butter. Add milk gradually to the mixture until the desired creamy consistency is reached - pour over bread.
