Many Cajun love making fig preserves – Great with bread, corn bread, or over cream cheese as an appetizer. Another sweet use is fig ice cream – so good. Works best with very ripe figs. Beat eggs with mixer until very frothy

Gradually add the milk and the vanilla and beat well.
Add the figs and mix well
Pour mixture into a 1 gallon container and follow ice cream maker instructions
To freeze ice cream use eight parts ice and one part salt. Finally crushed ice melts faster and will hasten the freezing, so it’s best to crush the larger pieces. Then follow ice cream makers manufacturing instructions
