Figs are among the oldest fruits. Figs are wonderful straight off the tree And what’s really nice you can also eat the peel. Many Cajun love making fig preserves – Great with bread, corn bread, or over cream cheese as an appetizer. Another sweet use is fig ice cream – so good. Works best with very ripe figs. This recipe is an adaptation from Cooks Tour of the Mississippi recipe
Ingredients
- 4 eggs
- 1 quart milk
- 2 cans evaporated milk 12oz
- 1 tablespoon vanilla extract
- 1 quart very ripe figs peeled
- 2 cups granulated sugar
- 1/2 cup fig syrup from fig preserves (optional)
Directions
Step 1
Beat eggs with mixer until very frothy
Step 2
Add the sugar and mix well
Step 3
Gradually add the milk and the vanilla and beat well.
Step 4
Add the figs and mix well
Step 5
Pour mixture into a 1 gallon container and follow ice cream maker instructions
Step 6
To freeze ice cream use eight parts ice and one part salt. Finally crushed ice melts faster and will hasten the freezing, so it’s best to crush the larger pieces. Then follow ice cream makers manufacturing instructions
