We was po’ & ate anything that didn’t eat us. When I had kids, Mom & Grandma would make fritters of all kinds for my children. It was a treat, they couldn’t wait to go (and visit) so they could get these.
Peel and dice eggplant and soak in sugar water; drain well.
Place in skillet WITHOUT water or butter, cover and simmer slowly until tender approximately 20 minutes..
Mash the eggplant then add in the rest of the ingredients.
Cook as fritters in hot oil until golden on each side, remove paper towels to drain. Sprinkle with cinnamon sugar or powdered sugar,. Enjoy!
