Cast Iron Baked Apple cake

This recipe has been in my family for about a hundred years. It is an incredibly dense apple cake. The secret to mine is the brown sugar and baking the cake in a cast iron skillet.

Ingredients

  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 tsp soda
  • 2 tsp cinnamon
  • 2 sticks margarine
  • 1 cup walnuts
  • 1 cup apples chopped
  • 2 cups flour
  • 1 tsp vanilla (Mexican vanilla is the best)
  • 2 eggs
  • 4 tbsp buttermilk

Directions

Step 1

Mix all ingredients together. Bake at 350 for 1 hour.

This cake turns out best when baked in a cast iron skillet. The cast iron skillet creates a little bit of crusty outer shell, much like cornbread baked this way.
