Carrot Casserole

This is a real quick and easy side dish.

Ingredients

  • 1 cup carrots
  • 2 eggs
  • 1/2 cup cracker crumbs
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp sugar
  • 6 tbsp butter, melted
  • 1 cup Velveeta cheese, grated

Directions

Step 1

Boil and mash the carrots.

Step 2

Add the rest of the ingredients to the carrots.

Step 3

Pour into an 8x8 greased casserole dish. Cook at 375 degrees for 25 minutes.
