Cynthia’s Cajun Chocolate Cake is decadent and delicious.
In a large mixing bowl mix 2 cups sugar and 2 cups flour. In a sauce pan bring to a boil 1 stick oleo, 4 T cocoa, 1/2 cup shortening and 1 cup water. Pour over dry ingredients.
Add: 2 eggs, 1 tsp soda, 1/2 cup buttermilk and 1 tsp vanilla. Mix well and bake in a well greased oblong pan for 25 minutes at 400 or until toothpick comes out clean.
Start 5 minutes before cake is done.
Mix 1 stick oleo, 4 T cocoa, 1/2 cup milk and bring to a boil. Add 1 box confectioners’ sugar, 1 tsp vanilla, and 1 cup pecans (chopped, optional). Pour over cake.
