Cajun Chicken Cacciatore

Flavorful (just as the Cajuns can make it), creamy tomato sauce with chicken over noodles or rice! Really simple to prepare, just requires attention.

Ingredients

• 2 lbs boneless chicken breast
• 1 1/2 cups flour
• 1/2 cup olive oil
• 1 onion, chopped fine
• 1 bell pepper, chopped
• 2-3 cloves of garlic, minced fine
• 2 (14 oz) cans chicken broth
• 1 (16 oz) can stewed tomatoes with onion and sweet pepper
• 1 (8 oz) can tomato sauce
• 1 (6 oz) can tomato paste
• 1 (8 oz) can mushrooms
• 1/2 tsp dried basil
• 2 bay leaves
• Salt, black pepper, red pepper, garlic powder to taste
• Fettuccini noodles
• Parmesan cheese, grated
