Lemon: it’s not just for lemonade.
Mix the sugar and cornstarch in a 2 quart saucepan. Stir in the boiling water gradually. Place over medium heat and bring to a boil for one minute, stirring constantly.
Lower heat and simmer until thickened.
Once thickened, stir in the margarine, lemon juice and rind. Serve over warm bread pudding.
