This was a special request recipe find.
In a large skillet, melt the butter and add olive oil.
Sauté the onions until softened, add garlic and cook for 30 seconds longer. Remove from skillet with a slotted spoon to a bowl.
Add chicken breast halves to skillet and brown on both sides.
Return onion mixture to skillet. Add broth and bourbon and combine well. Cover and let simmer over low heat for 20 minutes, or until chicken is tender and juices run clear.
