Barbecue Bar-b-que Crabs

A nice alternative to boiling crabs.- stuffing can be used to stuff mushrooms and to make shrimp egg rolls

Ingredients

  • 12 crabs cleaned and seasoned with salt and pepper or your favorite Cajun seasoning
  • 1 cup chopped onions
  • 1 pound chopped shrimp
  • 8 tbsp butter
  • 1 tsp Cajun seasoning to taste
  • 1/4 cup Parmesan cheese
  • One slice soaked bread in water or milk
  • 1/3 cup parsley
  • 1 tsp garlic granules
  • 1 tsp onion powder
  • Butter for basting crabs
  • 1/4 tsp white pepper (optional)

Directions

Step 1

Season the crab lightly with your favorite seasonings. Set aside.

Step 2

Sauté one stick of butter and the one cup onions

Step 3

Stir in and combine the chopped shrimp

Step 4

Add the remaining ingredients and blend with the onions and shrimp.

Step 5

Stuff the center of the crab.

Step 6

Baste with butter and cook on coals for about 20 minutes or until shrimp mixture is cooked thoroughly.

Step 7

To make egg rolls, place 1 to 1/12 tablespoons mixture diagonally onto the wrap. Fold the bottom corner over the filling, roll once, and bring flaps over and lightly moisten the edges and seal like an envelope. Heat oil to 350 degrees, place flap down in oil, fry to to three minutes to golden brown turning once or twice.

Step 8

Egg rolls may be baked in a 400 degree oven, brushed lightly with olive oil and placed on cookie sheet sprayed with cooking spray. Bake 10 to 12 minutes until lightly brown

Step 9

Stuffed Mushroom - Remove centers, chop fine, saute with shrimp mixture. Stuff center of mushrooms. Saute lightly in a non-stick buttered pan and top with cheese. Or bake 15 -20 minutes in 350 degree over. Top with cheese.
