This is a seafood casserole with cheese in it. My family loves it and asks me to make it all the time.
Melt butter in large skillet or deep pot Magnalite (works well).
Add onions, bell peppers, celery, green onions and seafood. Sauté until onions are clear then add soup.
Add heat for about 2 minutes then add cream cheese. Cook until cream cheese is melted, then pour seafood mixture into deep casserole dish.
Add cooked rice then crumble Ritz crackers on top and cover with shredded cheese.
Bake in a 350 degree oven for about 20 minutes until cheese on top is melted; let cool for 2 to 3 minutes.
