- I was looking for a boudin ball recipe and happened upon your site. I'd just like to say that I think this is one of the finest sites I've ever visited and that I will be returning to it again. I have lived many places out west, but I am originally from here and I was amazed at how many restaurants bastardize great cajun food and try to pass it off as "real, authentic cajun cuisine". You can't just coat something in cayenne, burn it and call it an authentic blackened dish. Keep up the fantastic work and WELCOME HOME!!!!!

- What a surprise to find this cookbook on line this morning. I ws looking for a roast beef recipe for a slow cooker. I just got off a 12 hour shift and feel like waking up to a good smell this afternoon. I used to live in Kaplan 20+ years ago. I picked a recipe by a Alberta Bert LeBlanc (from Kaplan). I used to work in Kaplan with an Alberta, could it possibly be the same person??? Anyway, I've got to go and get the pot roast on. - I came across your website while looking for a recipe to make boudin. My family and I are transplanted Cajuns from Lafayette, Louisiana living in Grand Junciton, Colorado. It warmed my heart to find your website. It made me a little less homesick. It seems that Cajuns seem to find each other when they are away from the Mother-Land and that has happened here. Last year, on Good Friday, we flew in live crawfish and had a huge boil for all of our friends, Cajun and not. Everyone had a blast. Now our friends, originally from Thibodaux, are returning the favor and hosting their own crawfish boil this year. With only a few days away, our mouths are watering. As one of my daughters put it, "Mama, I want to go back to Louisiana to go to college because I want to meet and marry a Cajun man and continue my french last name." I couldn't have hoped for better. It's really tough to find "Real" Cajun food on the Island. I completely understand what you mean about Misrepresented and misunderstood. Most people round here think "Cajun" means any food that is absurdly hot. Most people round here also think they know what Barbecue is...'Frid not!! - As a relocated cajun (22yrs. in lafayette) now in Dallas, Tx. I love your website. I just went to Ville Platte for a funeral and within hours of being there, my accent was back. And i already miss the small town hospitality. I didn't attend the parades for Mardi Gras, but seeing family is way better than any beads. I turned my wife on to real boudin from Don's seafood market in Carencro and she had to take home a 5lbs frozen box of it. thanks for the recipes it brings family closer to me when they can not be around.

- I love this site. I grew up on this wonderful cuisine. All my relatives live in Miss. and La. Every summer as a child I spent eating Gumbos, Ettoufees, shrimp, and crabs cooked in so many different ways imaginable. We would catch our own crabs and fish. It was a great life. It still is!
