- Accidently found this wonderful site while looking for crockpot red beans & rice recipe....that was an hour ago. I married into the Cajun Heritage and 30 years later I consider myself a "North Louisiana Cajun" I learned from my mother-in-law...after 5 long distance phone calls I had made my first pot of chicken gumbo and I end the story with "God Bless my husband...he ate it." Is it possible to have the ingredients scaled by using pounds instead of single items i.e., 100 chicken breasts / 30#'s ect...? I reference Real Cajun often lol.
