Sheila writes her recipe request: Hershey's Cocoa Cooked Icing - this recipe used to be on the Cocoa can; it no longer is, and Hershey's web site can't find it. I know it had granulated sugar, butter, water (I think) but don't know the proportions". Maw Maw pulled out her Hershey's 1934 cookbook and found one recipe in the bunch that had granulated sugar. If anyone has a recipe for the frosting...can you please submit? This recipe was called Fluffy Chocolate Icing.
 
Ingredients
1 cup granulated sugar 1 cup water
pinch pinch cream of tartar 2 egg whites
1/4 cup Hershey's Cocoa 1/2 tsp vanilla
 
Directions
Dissolve the sugar in the water, and add the cram of tartar. Boil to the soft-ball stage. (A small amount of mixture forms a soft ball when dropped into cold water 234 degrees F.) Beat egg whites until very stiff, then pour syrup in thin stream over them, beating all the time. Continue to beat until the frosting is cool and of right consistency to spread, about 10 minutes. Carefully fold in cocoa and vanilla. Yield: About 21/2 cupfuls icing or enough for a 8 or 9 inch layer cake.
