Crab Dip - A Classic!Mary Ann Broussard Recipe Collection for Florine
This recipe makes me long for the days of crabbing at Rockefeller Refuge with my children. Rockefeller Wildlife Refuge, located in eastern Cameron and western Vermilion Parishes, is owned and maintained by the State of Louisiana. When the Rockefeller Foundation officially granted the property to the state, they spelled out in the Deed of Donation exactly how the property was to be used. The crab's scientific name is Callinectes sapidus [call-in-ek-tis sap-ah-dis] which means “beautiful swimmer". An average crabs live no longer than 3 years. The biggest crab in Maryland was a male which measured nine inches. Crabs are also called decapod which means 10 legs. The swim paddles help the crab swim and if a crab loses its claw, the claw grows back.

And yes, you do cook the bread in wax paper. Really works great! From oven to serving or to freezer. This is a great party or holiday food. A nice addition is to add sautes bell pepper and breakfast sausage.

Pistolettes are a football shaped brown 'n serve bread rolls also known as French rolls. The inside of these rolls are carved out and replacing the cavity a delcious concoction of shrimp or crawfish wonderment. As my son says, there is nothing that taste better than 2 carbs together. This is it - !pistolette de ralentissements! for a small group. This crawfish/shrimp pistolettes recipe is the ONE that was prepared for the Maltrait Memorial School October Fete Bazaar in Kaplan, LA. The recipe is from MS Margaret David (Tissa's Mom); reduced for smaller quantities. The original recipe was for 50 pounds of crawfish. ALso you dont have to fry them...baking works!!!
